Cut the spring onion into thin slices and the iceberg salad also in smaller squares.
If you use the bigger shrimps, you can cut them into smaller pieces.
Crack the egg into a bowl (you can also add salt).
Heat the pan, add vegetable oil and then the egg, "break" it into smaller pieces by stirring, it does not have to be completely fried. Put the egg aside into a bowl.
Add the shrimp, salt and white wine/sake to the same pan. Fry for a while until they change color. Also put aside.
Add the sesame oil and onion to the pan, fry a little, then add the rice. Mix well so you don't have big chunks of rice. Then add the egg with shrimps. Mix well again and fry everything together for a while. Add soy sauce, salt and pepper and pieces of iceberg lettuce.
Sprinkle with toasted sesame seeds.
