- 200 g chicken meat
- 1 tbsp sake (or dry white wine)
- 8 g fresh ginger
- 1 medium-sized cucumber
- Salt
Na dresing:
- 1 tbsp mayonnaise
- 10 - 15 cm green part of spring onion
- 1,5 tbsp soy sauce
- 1 tsp sugar
- 1 tsp sesame oil
- 1/2 tbsp vinegar
- 2 tbsp toasted sesame seeds
- 10 - 15 g unsalted peanuts
- Grated ginger (optional)
Cut the chicken into smaller pieces and place in a bowl (a glass one is suitable, or a something you can use for steaming). Salt the meat and add sake/wine and ginger. I recommend cutting a piece of ginger into few slices and the rest of ginger finely grate for more aroma. Mix well and let it steam.
In the meantime, prepare the dressing. Crush or grind the roasted sesame seeds, but not completely into dust. Roast peanuts and cut them into small pieces. Finely chop the green parts of spring onion and mix it with all the other ingredients for the dressing.
When the meat is ready, cut or tear it into smaller pieces.
Cut the cucumber into approximately 4-5 cm long strips, put it in a stronger ziplock bag and crush it, but not completely to a mash.
Let's serve. First cucumber, then the meat an pour over the dressing.
